Lemon bars. Traditional British sweet recipe
The truth is, it's a super easy dessert to make and, what's more, perfect to enjoy with coffee.
And if you're a fan of lemons and lemon desserts, here's one of my favorites: lemon mousse. It's a sweet treat that reminds me of my childhood and that I absolutely love.
Ingredients
- 75 grams of butter
- 140 grams of sugar
- 115 grams of wheat flour
- 2 eggs
- The zest of half a lemon
- 75 ml of lemon juice
- 45 grams of icing sugar
- Half a teaspoon of vanilla extract.
- A pinch of salt
How to make lemon bars
1- We start by preheating the oven to 180 °C and while it's heating, we mix the butter at room temperature with 40 grams of sugar and the vanilla extract using a food processor.
2.- Add 100 grams of flour, a pinch of salt and knead until you obtain a dough that is like sand and very compact.
3.- Now line a baking pan with parchment paper or grease a mold approximately 15 × 15 cm.
4.- We put the dough in and press it down well to form a uniform layer and put it in the freezer for 10 minutes.
5. After that time, bake for 20 minutes, until the edges begin to brown slightly. If you don't freeze it first, it may crack.
6. While the base is baking, beat the eggs with the remaining 100 grams of sugar and 25 grams of icing sugar. Add the zest of half a lemon, the lemon juice, 15 grams of flour, and a pinch of salt. Mix very well.
7.- Remove the base from the oven and immediately pour the lemon cream over it.
8.- Lower the temperature to 160 °C and bake for 20 minutes, until the cream is set at the edges and a little wobbly in the center; you'll notice it if you move it a little.
9.- Remove from the oven and let cool completely to room temperature.
10.- Finally, we put it in the refrigerator for at least 2 hours so that the cream can fully set.
11. Cut into squares and sprinkle with icing sugar for decoration.
