Pheasant in port wine with baked bacon dumplings

breadcrumbs (for thickening the dough, as needed)

Ingredients
  • 1 ks bažant
  • 100 g anglická slanina, libová
  • 1 lžíce máslo
  • sůl
  • pepř, čerstvě namletý
  • 4 kuličky nové koření
  • 2 ks bobkový list
  • 1 snítka rozmarýn
  • 500 ml červené portské víno
  • 6 ks rohlík
  • 150 g mléko
  • 50 g slanina
  • 2 ks vejce
  • 2 hrsti hladkolistá petržel
  • 2 lžíce hrubá mouka
  • 2 lžíce sádlo
  • sůl
  • 1 špetka pepř, čerstvě namletý
  • strouhanka, na dohuštění těsta, dle potřeby

  1. Bažant na portském víně: Bažanta naporcujte na 6 kousků. Slaninu nakrájejte na proužky a část použijte na špikování masa. Do špikovací jehly zacvakněte klínek slaniny a po vláknech protáhněte masem. Pokud špikovací jehlu nemáte, můžete použít tenký ostrý nůž. Píchnutím do masa udělejte díry a otáčením čepele je postupně rozšiřte, případně si pomozte třeba násadou vařečky. To vám práci ulehčí. Slaninové klínky už do vzniklého otvoru snadno vsunete. Prošpikované bažantí porce osolte.
  2. Zbylou slaninu nakrájejte na kostičky, stejně tak cibuli. Přesuňte do hrnce, přidejte lžíci másla a orestujte. Na tento základ rozložte kousky bažanta, přidejte koření a zalijte portským vínem. Přiklopte pokličkou a velmi pomalu duste téměř doměkka.
  3. Aby se na pečínce vytvořila kůrčička, odeberte větší část omáčky, aby byl bažant jen lehce podlitý. Nezakryté maso vložte do rozpálené trouby alespoň na 15 minut při teplotě 200 °C.
  4. Pečené slaninové knedlíčky: Rozklepněte vajíčka a oddělte žloutky od bílků. Žloutky rozkvedlejte v mléce a bílky vyšlehejte v tuhý sníh.
  5. Pečivo nakrájejte na kostičky a lehce opečte na pánvičce s trochou sádla. Přesuňte do mísy, přidejte nadrobno nakrájenou slaninu, petrželku a zalijte žloutkovým mlékem. Jemně promíchejte a současně trošku osolte a opepřete. Nechte krátkou dobu stát, aby pečivo nasáklo.
  6. Do těsta zlehka vmíchejte ušlehané bílky. Pokud bude potřeba, přidejte trošku strouhanky pro lepší konzistenci.
  7. Vytvarujte menší kulaté knedlíčky, potřete zbývajícím sádlem a rozložte na plech. Pečte v předehřáté troubě dozlatova, při teplotě 180 °C to bude trvat asi 12 až 15 minut.

Pheasant

  • pepper (freshly ground)
  • red port wine 500 ml

Dumplings

  • pepper (freshly ground) 1 pinch
  • breadcrumbs (for thickening the dough, as needed)
  • Pheasant in port wine: Cut the pheasant into 6 pieces. Cut the bacon into strips and use some to skewer the meat. Clip a wedge of bacon into a skewer and thread it through the meat along the grain. If you don't have a skewer, you can use a thin, sharp knife. Make holes in the meat by piercing them and gradually widen them by turning the blade, or use the handle of a wooden spoon to help you. This will make your job easier. You can easily insert the bacon wedges into the holes. Salt the skewered pheasant portions.
  • Dice the remaining bacon and the onion. Transfer to a saucepan, add a tablespoon of butter and fry. Spread the pheasant pieces on this base, add the spices and pour in the port wine. Cover with a lid and simmer very slowly until almost tender.
  • To create a crust on the roast, remove most of the sauce so that the pheasant is only lightly basted. Place the uncovered meat in a preheated oven at 200°C for at least 15 minutes.
  • Baked bacon dumplings: Crack the eggs and separate the yolks from the whites. Beat the yolks in the milk and beat the whites until stiff.
  • Cut the pastry into cubes and lightly fry in a pan with a little lard. Transfer to a bowl, add the finely chopped bacon, parsley and pour over the egg yolk milk. Mix gently and season with a little salt and pepper. Leave to stand for a short time to allow the pastry to soak.
  • Gently fold the beaten egg whites into the batter. If necessary, add a little breadcrumbs for better consistency.
  • Shape into smaller round dumplings, brush with the remaining lard and place on a baking sheet. Bake in a preheated oven at 180°C until golden brown, about 12 to 15 minutes.
