Beans “A la Unusual” for Dinner: A Casserole for Any Occasion in 20 Minutes
If the beans are frozen, defrost them ahead of time.
- 500 g green beans (fresh or frozen),
- two bell peppers,
- one onion,
- three cloves of garlic,
- 400 g tomatoes in their own juice (or 3-4 fresh tomatoes),
- two tablespoons of vegetable oil,
- a teaspoon of sugar,
- salt,
- pepper and spices to taste,
- greens for serving.
How to cook
If the beans are frozen, defrost them ahead of time. Rinse the fresh beans and trim the ends. Seed the bell pepper and cut into large cubes. Chop the onion into half rings and mince the garlic.
Heat a frying pan with oil and fry the onion until translucent. Add the pepper and cook for a couple more minutes. Then add the beans and cook for 5–7 minutes, stirring occasionally.
Mash the tomatoes in their juice with a fork or blend them. Add to the vegetables, add sugar, salt, and spices. Stir, bring to a boil, and simmer for 10–15 minutes.
Preheat the oven to 180°C. Transfer the vegetable mixture to a baking dish. Bake for 20–25 minutes to allow the sauce to thicken and the beans to infuse with flavor. Sprinkle the finished dish with fresh herbs and serve hot.
Personal advice
For a more piquant flavor, add a pinch of hot pepper or a little smoked paprika to the sauce. For a heartier meal, add fried ground meat or mushrooms. You can also bake the dish in individual ramekins for easier serving.
