Recipe for cottage cheese waffles

These waffles are made with cottage cheese: it's blended until creamy, then folded into a regular batter. This base makes the waffles soft on the inside and crispy on the outside.

INGREDIENTS:

  • 200 g of cottage cheese 9%,
  • 100 g wheat flour,
  • 50 g granulated sugar (the amount can be reduced to taste),
  • 40 g butter 82.5%,
  • 10 g vanilla sugar,
  • 8 g baking powder,
  • 2 chicken eggs,
  • a pinch of salt.

HOW TO COOK

  • Prepare the curd mixture. Strain the curd through a sieve and blend it with the eggs until smooth. Add a banana if desired. Add the sugar, vanilla sugar, and a pinch of salt, and mix thoroughly.
  • Add the butter. Using a double boiler, melt the butter and let it cool to room temperature. Pour it into the curd mixture and stir.
  • Mix the dough. Sift the flour and baking powder together and gradually add it to the curd mixture, whisking until smooth and lump-free. The mixture should flow easily from a spoon. For a more varied texture, you can add chopped nuts, candied fruit, or chocolate chips.
  • Bake the waffles. Preheat the waffle iron for five minutes. Grease the work surface with vegetable oil before using it for the first time. Place a portion of batter (about 75 g) in the center, spread it evenly, and close the lid. Bake until golden brown—the baking time will vary depending on the waffle iron model.

Carefully remove the finished waffles with a spatula and transfer them to a plate.
