Watermelon cake
This watermelon cake is made without an oven: to compact the ingredients, you'll need a refrigerator and stovetop, butter, and gelatin.

- 600 g anguria pulita
- 250 g yogurt greco
- 100 g panna fresca
- 100 g spicchietti di anguria
- 100 g biscotti al cacao
- 100 g frollini
- 100 g burro più un po’
- 50 g zucchero semolato
- 40 g pistacchi sgusciati
- 30 g farina di riso
- 20 g amido di mais
- 25 g gelatina alimentare in fogli
- miele di acacia
- cannella in polvere
- essenza al gelsomino
- gocce di cioccolato
- menta
Method · 1 ora più 5 ore e 30 minuti di raffreddamento
- Rivestite il fondo di una tortiera (ø18cm,h9cm)con un disco di carta da forno e spennellatelo con poco burro fuso.
- Frullate i biscotti al cacao, i frollini e i pistacchi, poi unite il burro freddo, tagliato a pezzetti, e continuate a frullare. Distribuite il composto sul fondo della tortiera. Riponete in frigorifero per 30 minuti.
- Ammollate 10 g di gelatina in acqua fredda, quindi strizzatela e scaldatela leggermente.
- Semimontate la panna, poi unite lo yogurt, 2 cucchiai di miele e la gelatina scaldata. Versate il composto sulla base di biscotti, distribuendolo uniformemente; riponete in frigorifero per un’ora.
- Ammollate il resto della gelatina in acqua fredda.
- Frullate la polpa di anguria, setacciatela, unite poi lo zucchero, la farina di riso, l’amido di mais, amalgamate bene tutto con una frusta e, continuando a mescolare, portate sul fuoco fino all’ebollizione, unendo anche un pizzico di cannella e qualche goccia di essenza al gelsomino (volendo, potete sostituire l’essenza con 6-7 fiori freschi di gelsomino non trattato).
- Togliete dal fuoco, unite la gelatina ben strizzata e lasciate intiepidire il composto, continuando a mescolarlo.
- Lasciate raffreddare, poi versatelo sullo strato di yogurt e riponete in frigorifero per 4 ore.
- Completate con gocce di cioccolato, foglioline di menta, decorate con gli spicchietti di anguria e servite.
The base of this watermelon cake is made with cocoa biscuits, shortbread biscuits, and pistachios blended with cold butter. Then there's a layer of cream, yogurt, honey, and gelatin, followed by a layer of watermelon pulp, sugar, rice flour, and cornstarch, thickened over a low heat with cinnamon and jasmine essence. The cake is finished with chocolate chips, mint leaves, and watermelon segments.
- Time 1 hour plus 5 hours and 30 minutes cooling.
Procedure
- Step 1: Line the bottom of a cake pan (ø18cm, height 9cm) with a disc of baking paper and brush it with a little melted butter. Step 2: Blend the cocoa biscuits, shortbread biscuits, and pistachios, then add the cold butter, cut into pieces, and continue blending. Spread the mixture over the bottom of the cake pan. Refrigerate for 30 minutes. Step 3: Soak 10g of gelatin in cold water, then squeeze it out and warm it slightly. Step 4: Semi-whip the cream, then add the yogurt, 2 tablespoons of honey, and the warmed gelatin. Pour the mixture over the biscuit base, spreading it evenly; refrigerate for an hour. Step 5: Soak the remaining gelatin in cold water. Step 6: Blend the watermelon pulp, sift it, then add the sugar, rice flour, and cornstarch. Mix everything well with a whisk. Continue stirring until boiling, adding a pinch of cinnamon and a few drops of jasmine essence (if desired, you can replace the essence with 6-7 fresh, untreated jasmine flowers). Step 7: Remove from the heat, stir in the well-squeezed gelatin, and let the mixture cool, stirring constantly. Step 8: Let it cool, then pour it over the yogurt layer and refrigerate for 4 hours. Step 9: Garnish with chocolate chips, mint leaves, and watermelon wedges. Serve.
