Meat storage times in the freezer: what can be kept for months and what is better to use up faster

Freezing allows you to store meat for a long time, but not all foods should be left in there for the same amount of time.

Therefore, meat that has been in the freezer longer than the recommended period does not necessarily need to be thrown away immediately. However, the longer it is stored, the more moisture it loses and the higher the risk that the product will be dry, tough or have a worse taste after defrosting.

Beef and pork

For steaks, chops, and large cuts of beef and pork, the recommended shelf life is 4-12 months. This range is quite wide, as a lot depends on the type of meat, packaging, and freezer conditions.

If you plan to store meat closer to the upper limit of this period, it is better to additionally protect it from contact with air. Thin store packaging allows air to pass through, so for long-term storage, it is recommended to additionally wrap it with dense film, foil, or a special freezer bag.

It is better to use the minced meat earlier.

The situation is different with minced meat. Beef, pork, chicken, turkey, and other minced meats retain their quality best for about 3-4 months.

Therefore, if you are making stocks, you should not put minced meat in the freezer without a date. It is more convenient to immediately divide it into portions, open the bags and write the number of freezing. A flat piece freezes faster and is easier to defrost in the right amount.

There is another advantage: it is easier to use old stocks first if you store products on a "first-in, first-out" basis.

Chicken can be stored the longest

A whole chicken or turkey, when properly frozen, can maintain its best quality for up to 12 months. For individual parts of the bird, the guideline is up to 9 months.

Before freezing, check the packaging for damage. If it is thin or does not close tightly, it is better to repackage the product.

For poultry, it is especially important not to leave the meat uncovered in the freezer. Otherwise, the surface will dry out more quickly, and the pieces may be less juicy after cooking.

Bacon and sausages should not be stored for long periods of time.

For some meat products, the time frame is even shorter. Bacon is recommended to be stored in the freezer for about 1 month, and raw sausages, 1-2 months.

Therefore, it is better to arrange such stocks so that they are easy to see. If a product ends up at the bottom of the freezer drawer, it is easy to remember about it even when the quality has noticeably deteriorated.

Why do dry spots appear on meat?

White, grayish, or dry areas on frozen meat are often the result of freezer burn. It occurs due to moisture loss and contact of the product with air.

Freezer burn itself does not make meat unsafe, but it can significantly affect the flavor and texture of the meat. These areas can be trimmed off before cooking.

To reduce the risk, avoid leaving large air pockets in the packaging. For long-term storage, use materials that fit tightly to the product and are designed for the freezer.

What to do if the meat is slightly thawed

It is not only the defrosting time that is important here, but also the temperature of the product. If the meat still has ice crystals or its temperature is 4 °C or lower, it can be refrozen. However, the quality may deteriorate after a defrosting and refreezing cycle.

If the product has completely thawed and has been out of the refrigerator for more than two hours, it should not be refrozen. Also, you should not determine the safety of raw meat solely by its smell or appearance.

Defrost only in a safe way

The easiest way to thaw meat is to transfer it from the freezer to the refrigerator and let it thaw gradually. If you need a faster option, you can use cold water or a microwave, following safety precautions.

Hot water is not suitable for defrosting, as the surface of the product may reach a dangerous temperature range before the middle has thawed.

Once thawed in the refrigerator, ground meat and poultry should be cooked or refrozen within 1-2 days. For beef, pork, lamb or veal in pieces, this period is 3-5 days.

Do not put meat that has already started to spoil in the freezer.

Freezing does not “reset” the condition of the product. If fresh meat has been in the refrigerator for a long time or shows signs of spoilage, freezing will not make it fresh again.

For raw ground meat and poultry, the guideline in the refrigerator is 1-2 days, and for steaks, chops and large pieces of beef or pork, 3-5 days. If you do not plan to cook the product during this period, it is better to freeze it beforehand.

What to remember

For convenience, you can focus on four main numbers: minced meat, 3-4 months; beef and pork pieces, 4-12 months; chicken parts, up to 9 months; whole poultry, up to a year. These periods are needed primarily to maintain good quality, and are not a date after which the product automatically becomes unsafe.

The easiest way to avoid getting lost in your supplies is to label each package with the freezing date, close it tightly, and regularly check what's in the freezer. It's best to get out older packages first, and don't leave products with a short recommended shelf life "for later."
