Vegan pulled mushroom taco recipe

Pulled mushroom tacos are a very tasty way to bring that juicy, shredded meat texture to the plant world, without the result feeling like a sad copy of it.

  • 600 g de setas de cardo o setas de ostra

  • 1 cucharada de pimentón ahumado (paprika)
  • 1 cucharadita de comino molido
  • 1 cucharadita de ajo en polvo
  • 1 cucharadita de cebolla en polvo
  • 2 cucharadas de salsa de soja o tamari
  • 1 cucharada de sirope de agave o azúcar moreno
  • Sal y pimienta negra al gusto
  • 12 tortillas de maíz pequeñas
  • 1 taza de frijoles negros cocidos y escurridos
  • 1 aguacate o palta grande en rebanadas
  • Media cebolla morada picada en cubos pequeños
  • Un manojo de cilantro fresco picado
  • 2 limas cortadas en cuartos
  • Salsa picante al gusto

  1. Limpia las setas con un paño húmedo para quitar restos de tierra. No las laves bajo el grifo porque absorberán demasiada agua.
  2. Deshebra las setas usando tus manos o un tenedor. Sujeta el sombrero y tira hacia el tallo para obtener tiras finas, similares a la carne deshilachada.
  3. Calienta una sartén amplia a fuego medio-alto sin aceite. Añade las setas y coloca otra sartén pesada o una prensa encima para aplastarlas durante 4 minutos. Este paso elimina el exceso de humedad interna.
  4. Retira la prensa, añade las dos cucharadas de aceite y saltea las setas durante 5 minutos hasta que empiecen a dorarse.
  5. Mezcla en un bol pequeño el pimentón, comino, ajo, cebolla, salsa de soja y el sirope de agave.

  8. Hornea durante 12 o 15 minutos. A mitad de tiempo, remueve las setas para que las puntas se vuelvan crujientes de forma uniforme.
  9. Calienta las tortillas de maíz en un comal o sartén limpia hasta que estén flexibles.
