Apple Jelly with Gelatin

Wash the apples, peel them, and remove the cores and seeds.

Step 1

Wash the apples, peel them, and remove the cores and seeds. Trim off any damaged areas if necessary. Cut the peeled flesh into small pieces, place in a saucepan, and add 1 cup of water.

Step 2

Place the pan over medium heat and bring to a boil. Then reduce the heat and simmer the apples for 15–20 minutes, until softened. Cool to a comfortable temperature.

Using a blender, puree the cooled apples until smooth. Add the sugar and mix thoroughly until completely dissolved.

In a separate bowl, combine the gelatin with half a cup of water and let it bloom. This usually takes 10-15 minutes. Then, gently warm the gelatin until it becomes smooth. You can do this in a double boiler or over low heat. Just don't let the mixture boil, or the jelly won't set.

Pour the gelatin into the puree and mix well. You can also add the remaining apple juice. Divide the mixture among bowls, glasses, or molds. Let the dessert cool, then refrigerate for at least 3 hours.

Serve the applesauce jelly once it's completely set. If you used molds, dip them in warm water for a few seconds—this will make it easier to transfer the jelly to a plate.
