Broccoli salad
gg medium-aged Gouda (or Gruyère)
Ingredients · Servings 4
- 1 rote Zwiebel
- 200 g mittelalter Gouda
- 200 g Kochschinken
- 75 g Kernmischung
- 1 kg Brokkoli
- Salz
- 250 g Crème fraîche
- 1 El körniger Senf
- 1 Bio-Zitrone
- 1,5 El Ahornsirup
- schwarzer Pfeffer
Method · 25 min
- Quarter the onion lengthwise and slice crosswise into strips. Cut the cheese and ham into strips. Toast the salad seeds in a dry pan until golden brown, then let them cool.
- Clean the broccoli and cut the florets from the stalk. Peel the stalk, halve it lengthwise, and slice it. Bring a little salted water to a boil in a wide pot and cook the broccoli florets and stalk, covered, for 5 minutes until tender-crisp. Drain, reserving some of the cooking water, and let it cool. Cut the florets into bite-sized pieces.
- For the dressing, whisk together crème fraîche, mustard, and maple syrup until creamy. Gradually add lemon juice and zest until a smooth sauce forms. Thin with the reserved broccoli cooking water to the desired consistency and season to taste. Add pepper. Toss the salad ingredients in a bowl with the dressing, cover, and refrigerate for at least 1 hour, or preferably overnight.
