Stir-fried rice with goat cheese and mussels

Stir-fried rice with goat cheese and mussels is our chef's take on a classic Lombard dish.

Ingredients
  • 500 g cozze
  • 300 g riso Carnaroli
  • 160 g formaggio caprino fresco
  • 120 g mandorle bianche
  • 2 bustine zafferano
  • finocchietto
  • maggiorana
  • olio extravergine di oliva

Method · 1 ora e 10 minuti più 12 ore di riposo
  1. Mettete a bagno le mandorle in acqua e lasciatevele per 12 ore.
  2. Fate aprire le cozze in una pentola con il coperchio. Spegnete, sgusciate le cozze e tenetele da parte. Filtrate l’acqua e conservatela.
  3. Scolate le mandorle e frullatele finemente, aggiungendo circa 100 g di acqua delle cozze: otterrete una crema sapida.
  4. Portate a bollore circa 1,2 litri di acqua con 2 bustine di zafferano.
  5. Tostate il riso in una casseruola con un filo di olio. Salatelo leggermente e sfumatelo con 2 mestoli di acqua allo zafferano. Portatelo poi a cottura aggiungendo il brodo restante poco per volta.
  6. Mantecatelo con la crema di mandorle, mescolando, e lasciatelo raffreddare coperto.
  7. Appoggiate un anello in una padella antiaderente, dopo avere unto i bordi con un filo di olio. Versate un cucchiaio di olio nella padella e scaldatelo.
  8. Pressate il riso nell’anello, livellandolo, e lasciatelo rosolare per circa 8-10 minuti, quindi voltatelo sull’altro lato, aiutandovi con un vassoio (se preferite, potete preparare quattro tortini più piccoli, anziché un unico tortino, più facili da voltare).
  9. Servite il riso al salto completando con le cozze sgusciate, piccole quenelle di caprino, finocchietto e maggiorana.

The recipe was perfected with the valuable advice of chef Aurora Mazzucchelli. Here's what she suggested: "Instead of simply blending the almonds, it's better to quickly toast them in a pan to add a little extra flavor, then soak them in water the night before, then blend them with a little liquid to obtain a smoother cream.

Saffron is a good idea, but it's better to add it to the water/broth you use to cook the rice, so that it remains more delicate. Try preparing it this way and also discover these recipes:

Procedure

  • Step 1: Soak the almonds in water for 12 hours. Step 2: Let the mussels open in a covered pot. Turn off the heat, shell the mussels, and set aside. Strain the water and reserve it. Step 3: Drain the almonds and blend them finely, adding about 100 g of the mussel water: you will obtain a savory cream. Step 4: Bring about 1.2 liters of water to a boil with 2 sachets of saffron. Step 5: Toast the rice in a saucepan with a drizzle of oil. Season lightly with salt and add 2 ladles of saffron water. Then, cook until done, gradually adding the remaining broth. Step 6: Stir in the almond cream, then let cool, covered. Step 7: Place a ring in a nonstick pan, after having greased the edges with a drizzle of oil. Pour a tablespoon of oil into the pan and heat it. Step 8: Press the rice into the ring, leveling it, and let it brown for about 8-10 minutes, then turn it over onto the other side, using a tray to help you. (If you prefer, you can make four smaller cakes instead of one, which are easier to flip.) Step 9: Serve the stir-fried rice, garnished with the shelled mussels, small quenelles of goat cheese, fennel, and marjoram.
