Fluffy vanilla yogurt waffles for the perfect breakfast

Is there any occasion that doesn't call for freshly baked waffles? Hardly. Whether as a sweet treat on Sunday morning, a cozy accompaniment to afternoon coffee, or even a savory dinner in a modified form, waffles are always a good idea.

  • Vegetable oil (for the waffle iron)
  • 250 g flour
  • 2 tsp baking powder
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt

  • 100 ml milk
  • 50 g butter (melted)
  • 1 vanilla bean

  1. Preheat the waffle iron and coat it with a little oil.
  2. Mix flour, baking powder, sugar, vanilla sugar and salt in a bowl.
  3. In a second bowl, combine eggs, yogurt, milk, melted butter and the seeds from a vanilla pod, and mix all the ingredients together well.
  4. Add the wet ingredients to the dry ingredients and mix everything well until a smooth dough is formed.
  5. Pour a ladleful of batter into the waffle iron and bake for 3-5 minutes, until the waffles are golden brown. Repeat with the remaining batter. Serve the waffles warm with fresh fruit, chocolate spread, or whipped cream.

How to bake vanilla yogurt waffles

Often, the waffle iron languishes in the back of the kitchen cupboard. But it's worth bringing it out again and dusting it off. If you're looking for a simple recipe idea, homemade vanilla yogurt waffles are a surefire hit.

Preparing the dough is simple and follows a tried-and-tested principle from the bakery. First, thoroughly mix all the dry ingredients in a large bowl. In a second bowl, whisk the wet ingredients until smooth. When you combine the two mixtures, stir only until just combined. Overmixing will make the dough tough, while gently folding in the wet ingredients ensures the desired fluffiness. For a particularly intense aroma, scrape the seeds from a real vanilla bean. However, a high-quality vanilla extract will serve the same purpose and also add a wonderful flavor to your baked goods.

Before you pour the first spoonful of batter into the waffle iron, it must be completely heated. Carefully brush the hot surfaces with vegetable oil. This step prevents your waffles from sticking and cracking. It's a common occurrence in many kitchens that the very first waffle often doesn't have the perfect shape or remains somewhat pale. This is absolutely no problem and offers you the ideal opportunity for a first taste test right at the stovetop. Lightly brush the baking surfaces again before each new portion of batter so that the remaining waffles also turn out perfectly and land intact on the plate.

Once all the batter is used and a small waffle tower has formed, you can serve it immediately. The warm waffles taste delicious on their own and don't necessarily need any elaborate accompaniments. If you'd like to make it a bit more festive, combine the waffles with fresh berries or an aromatic fruit compote.
