Recipe for duck breast and spinach skewers

Ingredients · Servings 2
  • 1 duck breast
  • 125g of dried apricots, preferably rehydrated
  • 1/2 onion
  • Salt, pepper, olive oil
  • 4 wooden skewers
  • A good handful of spinach shoots
  • 25g of butter
Method · 20 min
  1. Prepare the skewers: Rinse the skewers under running water to moisten them. Cut the duck breast in half lengthwise, then cut each half into four or five pieces.
  2. Cut the half onion into large pieces.
  3. Assemble the skewers by alternating: a piece of duck breast, a piece of onion, an apricot, a piece of duck breast, etc. Allow approximately 3 or 4 apricots per skewer.
  4. Preheat the ovens to 180°.
  5. Place the skewers in an ovenproof dish. Sprinkle with salt, pepper and a drizzle of olive oil.
  6. When the oven is nice and hot, put the skewers in for only ten minutes.
  7. Meanwhile, wash and drain the spinach. Melt the butter in a saucepan, then add the spinach and cook for a few moments until wilted. Serve the kebabs with the spinach.

Plat

Elegant sweet and savory skewers: duck, dried apricots, onions. Served with baby spinach lightly sautéed in butter, a feast for the eyes.
