Ingredients · Servings 2
  • One 750g melon yields approximately 360g of flesh
  • 1 level teaspoon of agar-agar, or failing that, two sheets of gelatin that have been softened beforehand
  • 1 pinch of salt
  • Espelette pepper
  • Jambon serrano
Method · 11 min
  1. Scoop out the melon flesh and blend it finely. Add salt and chili pepper. Place in a saucepan with the agar agar and bring to a boil until the mixture sets.
  2. Pour into a container lined with cling film. Refrigerate. Cut into large cubes.
  3. For the ham: Place a slice between two plates and microwave. Let it cool (it will harden) and cut the ham into pieces to place in the melon cubes. Garnish with chili pepper.
