Salad with cantaloupe

Cantaloupe salad with serrano ham, feta and herbs

Ingredients · Servings 4
  • 1 cantaloupe melon
  • 1 cucumber
  • 8 slice(s) serrano ham
  • 125 g feta cheese
  • 1 handful of basil leaves
  • 1 handful of mint leaves
  • 100 g mixed salad
Method · 20 min
  1. Cut the melon in half, remove the seeds and cut the flesh into pieces. Cut the cucumber in half, scrape out the seeds and cut into thin slices.
  2. Place the salad on a large platter and arrange the melon, cucumber and ham over it.
  3. Crumble the feta and spread it out.
  4. Top with basil and mint.
  5. Whisk together the vinaigrette, season to taste, and drizzle over the salad just before serving.
  6. Tip: Good with some toasted pistachios or pumpkin seeds on top.

A fresh summer salad is just what we crave on hot days. Here we have created a variation with cantaloupe and serrano ham - a classic combination that goes great with barbecue. The salad can also be served as a simple lunch or light dinner.

1 cantaloupe melon, ripe, or other sweet melon

1 cucumber, sliced

8 slice(s) serrano ham or parma ham
