  • 250 g of
  • 00 flour
  • 2 eggs
  • 100 g of sugar
  • 80 g of extra virgin olive oil
  • 1 sachet of baking powder
  • 5 ml of vanilla extract
  • 150 g of water
  • 1 pinch of salt
  • 150 g of blueberries
  • 100 g of mango pulp

Making Mango and Blueberry Muffins

To make this very special recipe, first sift the flour and baking powder into a large bowl, then add the sugar and a pinch of salt. Mix gently with a hand whisk and set aside. In another bowl, mix all the liquid ingredients—the egg yolks, water, and extra virgin olive oil—with an electric whisk until the mixture is light and fluffy.

Separately, beat the egg whites with the vanilla extract until stiff, incorporate the two mixtures with a spatula using movements from the bottom upwards so as to avoid deflating the mixture too much, at this point also add the powders, always mixing with circular movements in a clockwise direction, finally also add the mango pulp and the blueberries and mix again.

Butter and flour some suitable molds, fill them 3/4 full with the mixture, and bake in a preheated oven at 180°C (350°F) for 15-20 minutes. Once baked, let them cool completely before serving. These delicious treats are ready for you to decorate with powdered sugar, ice cream, or whipped cream. Either way, they'll be absolutely delicious and go up in no time! Enjoy!
