Cold soups - discover various versions of summer soup!

During the summer, instead of classic soups, cold soups dominate the table – easy to prepare, full of vegetables, and perfect for a summer dinner. However, the classic cold beet soup is just the beginning! You can also prepare versions with cucumbers, tomatoes, fruit, or inspired by the flavors of other cuisines.

In this list, you'll find recipes for various cold soups, so you can easily adapt the dish to your preferences and what you have in the fridge.

A classic of the genre, i.e. Lithuanian cold soup

A traditional cold soup made with sour milk (or sour cream or buttermilk) and beet greens with various additions. All fresh summer vegetables are perfect here – radishes, cucumbers, and, of course, dill! In this version, the cold soup is made with yogurt and buttermilk with vegetable broth – the flavor is exquisite!

Cold cucumber soup - light but with character

A very easy-to-prepare cold soup, requiring only a few ingredients. The base is kefir, and the delicate cucumber is offset by onion and garlic. It's a must-have served with an egg and an interesting addition – cottage cheese.

Fruit cold soup with a sweet addition

Cold soup is the perfect summer soup, and it also works well as a sweet dish. During the holidays, seasonal fruit is readily available, making it the perfect base for a cold soup. Be sure to try the cold blueberry soup. Here, it comes with an interesting addition – a shashlik made from pancakes stuffed with cheese and fruit. It's filling and sure to please even the youngest.

Cold soup from around the world, i.e. gazpacho, okroshka and tarator

Many countries have their own versions of cold soups. Besides Lithuanian, the most famous is gazpacho. It's a Spanish version made with tomatoes, peppers, and cucumbers. It has a distinctive flavor thanks to the appropriate spices. Less well-known but equally delicious is Russian okroshka. It's a very interesting soup based on kvass, mustard, and vegetables. Another example is Bulgarian tarator. It's similar to the familiar cucumber soup, but with the addition of walnuts and a Balkan yogurt base.
