Super quick and fluffy apple cake

  • 4 Apples
  • 1 tablespoon lemon juice
  • 3 Eggs
  • 125g softened butter
  • Butter for the mold
  • 180 g Powdered sugar
  • 2 tsp liquid vanilla extract
  • 170 g Flour
  • Flour for the mold
  • 0.5 sachet Baking powder
  • 1 tablespoon granulated sugar
  • 1 pinch of salt

  1. Break the eggs, separating the yolks from the whites. In a bowl, whisk the butter with the sugar and vanilla extract until creamy.
  2. Preheat the oven to 180°C (gas mark 6). Incorporate the egg yolks one by one, then sift together the flour and baking powder and incorporate them.
  3. Whisk the egg whites until stiff peaks form with a pinch of salt, then gradually incorporate them: first a little to loosen the batter, then the rest with a spatula.
  4. Peel and core the apples, cut them into cubes, and toss them with lemon juice to prevent browning. Stir them into the batter. Butter and flour a springform pan, then pour in the batter. Bake for 45 minutes.
  5. Once out of the oven, sprinkle with granulated sugar and let it cool for a few minutes before unmolding.

This moist and incredibly quick apple cake is an easy dessert to make in just 20 minutes of preparation. It pairs wonderfully with a scoop of vanilla ice cream.
