Super quick and fluffy apple cake

- 4 Apples
- 1 tablespoon lemon juice
- 3 Eggs
- 125g softened butter
- Butter for the mold
- 180 g Powdered sugar
- 2 tsp liquid vanilla extract
- 170 g Flour
- Flour for the mold
- 0.5 sachet Baking powder
- 1 tablespoon granulated sugar
- 1 pinch of salt

- Break the eggs, separating the yolks from the whites. In a bowl, whisk the butter with the sugar and vanilla extract until creamy.
- Preheat the oven to 180°C (gas mark 6). Incorporate the egg yolks one by one, then sift together the flour and baking powder and incorporate them.
- Whisk the egg whites until stiff peaks form with a pinch of salt, then gradually incorporate them: first a little to loosen the batter, then the rest with a spatula.
- Peel and core the apples, cut them into cubes, and toss them with lemon juice to prevent browning. Stir them into the batter. Butter and flour a springform pan, then pour in the batter. Bake for 45 minutes.
- Once out of the oven, sprinkle with granulated sugar and let it cool for a few minutes before unmolding.
