Korean-style cucumber salad with U-style plain yogurt and sesame dressing

  • 150g U Bleu-Blanc-Cœur Plain Yogurt
  • 2 Cucumber(s) U
  • 2 tablespoons Sesame
  • 1 clove of garlic
  • 1 Citron
  • Fresh mint
  • 1 tsp Sesame oil
  • Cell
  • Pepper
Method · 15 min
  1. Cut the cucumbers into thin slices or small sticks. Place them in a colander, salt generously, and let them drain for 15 minutes. Rinse and drain well.
  2. Mix the plain U yogurt with the chopped garlic, lemon juice, sesame seeds, salt and pepper. Add sesame oil if you have some.
  3. Mix the cucumbers with the U yogurt sauce. Refrigerate for 5 minutes.
  4. Serve sprinkled with chopped fresh mint and a little extra sesame.
  5. Leftover salad? Use it as a topping for a cold bowl with rice and vegetables, or as a quick spread on toast with some crumbled goat cheese.

We discovered this Korean technique by chance, and since then we never make cucumber salad any other way. The secret: salt the cucumber 15 minutes beforehand so it stays nice and crisp, then toss it with a sesame-plain yogurt dressing. Zero cooking, 10 minutes, and a fresh and original salad that's unlike any other we've ever had. The Bleu-Blanc-Cœur plain yogurt, at cost price and made with French milk, provides the creamy base that transforms the recipe.

Tips

Salt is the key: by drawing out the cucumber's moisture, it eliminates excess water and makes the flesh firmer and crisper. The result: the salad doesn't release water and stays crisp for several hours in the refrigerator.
