Chocolate mousse made with Thermomix
Invented by Charles Fazi, a servant of Louis XVI, the composition of chocolate mousse can vary but always contains at least chocolate with whipped egg whites or whipped cream.
- Eggs - 7
- Salt - 1 pinch
- Powdered sugar - 50 grams
- Dark chocolate - 300 grams
- Liquid fresh cream - 150 grams
- Add the whisk.
- Place 7 egg whites in the Thermomix bowl.
- Add 1 pinch of salt to the Thermomix bowl.
- Add the lid without the measuring cup.
- Mix for 6 min 30 sec/speed 3. Add 50 grams of caster sugar gradually and in a steady stream during the last 2 minutes through the opening in the lid of the Thermomix.
- Remove the whisk.
- Transfer to a container and refrigerate.
- Place 300 grams of dark chocolate, cut into pieces, in the Thermomix bowl.
- Add 150 grams of liquid fresh cream to the Thermomix bowl.
- Add the lid with the measuring cup
- Heat for 4 min/60°C/Speed Spoon.
- Add the 3 egg yolks to the Thermomix bowl.
- Add the lid with the measuring cup
- Mix for 20 seconds/speed 4.
- Gently fold this mixture into the beaten egg whites using a spatula.
- Transfer to a salad bowl and refrigerate for 8 hours.
This Thermomix chocolate mousse recipe consists of whipped egg whites to which egg yolks and a little cream are added to obtain a smooth, tasty mousse that is both dense and airy .
Place 7 egg whites and a pinch of salt in the Thermomix. Mix for 6 minutes 30 seconds / speed 3 without the measuring cup, adding 50 grams of caster sugar gradually through the lid opening during the last 2 minutes, then remove the whisk.
Transfer to a container and then refrigerate.
Place 300 grams of dark chocolate cut into pieces and 150 grams of liquid fresh cream in the Thermomix. Heat for 4 minutes / 60°C /.
Add the 3 egg yolks to the Thermomix and mix for 20 seconds / speed 4.
Transfer to a salad bowl and then refrigerate for 8 hours.

I made 7 ramekins of 8 cm (3 inches) using 64% dark chocolate chips (purchased from a bakery supplier). I whipped the egg whites with an electric mixer in a large 24 cm (9.5 inch) mixing bowl while the chocolate melted in the Thermomix. The mousse was excellent, with a perfect texture, and I chilled it under a Tupperware dome. To use the 4 remaining egg yolks, I made crème anglaise (recipe on this site) with 4 yolks instead of 3. I'll definitely make it again. Thank you for sharing.
