Tabbouleh in the Thermomix

In the summer, at our house, it's tabbouleh or nothing. Super fresh, lemony, full of fragrant herbs, and it's filling without being heavy. We make a big bowl of it on the weekend, and then we snack on it all week long: with grilled food, falafel, or just on its own when we're feeling lazy.

Ingredients · Servings 6
  • Medium couscous semolina - 300 grams
  • Olive oil - 50 grams
  • Water - 50 grams
  • Salt - 1 teaspoon
  • Lemon juice - 4 tablespoons
  • Yellow onion - 1
  • Fresh mint - 10 leaves
  • Red bell pepper - 1
  • Tomatoes - 4
  • Cucumber - 1
  • Raisins (optional) - 20 grams
Method · 40 min
  1. Place 300 grams of medium couscous semolina in the Thermomix bowl.
  2. Add 50 grams of olive oil to the Thermomix bowl.
  3. Add 50 grams of water to the Thermomix bowl.
  4. Add 1 teaspoon of salt (adjust to taste) to the Thermomix bowl.
  5. Add 4 tablespoons of lemon juice (adjust according to taste) to the Thermomix bowl.
  6. Add the lid with the measuring cup
  7. Mix for 15 seconds/speed 4.
  8. Transfer to a salad bowl and set aside.
  9. Place 1 yellow onion, cut into quarters, in the Thermomix bowl.
  10. Add 10 fresh mint leaves to the Thermomix bowl.
  11. Add the lid with the measuring cup
  12. Mix for 4 seconds/speed 5.
  13. Scrape the sides of the bowl with the spatula.
  14. Add 1 chopped red pepper to the Thermomix bowl.
  15. Add 4 chopped tomatoes to the Thermomix bowl.
  16. Add 1 chopped cucumber to the Thermomix bowl.
  17. Add the lid with the measuring cup
  18. Mix for 6 seconds/speed 4.
  19. Add 20 grams of raisins (optional) to the Thermomix bowl.
  20. Mix with the semolina.
  21. Refrigerate for 30 minutes.

The Thermomix has changed everything: no more spending 30 minutes chopping parsley by hand (my fingers used to smell like grass for ages). A few seconds and it's perfect, no green mush. As for the semolina, a quick heat with oil, lemon, and salt, and it swells perfectly.

I make the "French" version with quite a bit of semolina, because my kids find the real Lebanese version (much more parsley, very little wheat) too grassy. My aunt, who lived in Beirut, always teases me: "It's parsley salad, not tabbouleh!" So I still add plenty of herbs, and a few raisins for that sweet and savory touch I love.

The more lemon, the better, that's what makes it so vibrant. It keeps really well in the fridge for 4-5 days, and it's even better the next day.

In short, a perfect summer dish, quick to make with a food processor, and guaranteed to put a smile on your face. If you have fresh herbs, go for it – and don't skimp on the parsley, okay!

Semolina

Place 300 grams of medium couscous semolina, 50 grams of olive oil, 50 grams of water, 1 teaspoon of salt (adjust to taste) and 4 tablespoons of lemon juice (adjust to taste) in the Thermomix. Mix for 15 seconds / speed 4.

Transfer the contents of the Thermomix into a bowl and set aside.

The garnish

Place 1 yellow onion, quartered, and 10 fresh mint leaves in the Thermomix. Mix for 4 seconds / speed 5. Then scrape down the sides of the bowl with the spatula.

Add 1 chopped red pepper, 4 chopped tomatoes and 1 chopped cucumber to the Thermomix. Mix for 6 seconds / speed 4.

Add 20 grams of raisins (optional) to the Thermomix.
