Chicken Sotanghon Soup Recipe

The Soul-Soothing Magic of Chicken Sotanghon Soup in Rainy Seasons

Ingredients · Servings 4
  • 2 tbsp. Canola Oil
  • 4 cloves Garlic (minced)
  • 1 med. Onion (sliced)
  • 1 inch Ginger (strips)
  • 400 grams Chicken Legs (quartered)
  • 1/2 tsp Salt & Black Pepper
  • 1 liter Water
  • 1-1½ pcs Chicken Cubes (adjust according to taste)
  • 1 med. Carrot (strips)
  • 1 cup Cabbage (sliced)
  • 3.2 oz Sotanghon (Vermicelli, dry or soak in water)
  • 2 tbsp Atsuete Seeds or 1tbsp. Atsuete Powder
  • 3 tbsp Scallions (chopped (white part))
  • 4 med Hard Boiled Eggs (halves)
  • 4 tbsp Fried Garlic ((less or more for garnish))
  • 4 tbsp Scallions (chopped (green part))
Method · 45 min
  1. Pour 2 tbsp Oil in a Casserole, then Heat Oil.
  2. Add 1 med. White Onion, then Saute onion until softened.
  3. Add minced Garlic, Saute until light brown.
  4. Add Chicken and continue to saute until it renders some fat & a little broth.
  5. Add ginger then saute until fragrant.
  6. Add 1/2 tsp. of Salt & Black Pepper
  7. Season with salt & pepper.
  8. Continue to saute until chicken turns lightly brown.
  9. Pour 1 Liter of Water
  10. Cover & simmer chicken for 20mins. on medium low heat.
  11. Remove any scum that floats on top.
  12. Soak 2tbsp. atsuete seeds in water or hot broth for about 5mins.
  13. Add 1 Chicken Knorr Cube and Carrot strips
  14. Simmer carrots for 2 minutes.
  15. Add 1 cup Cabbage then Simmer for another 2 minutes.
  16. Add 3.2oz of Vermicelli glass noodles (dry or soak in water).
  17. Pour in soaked atsuete seeds through a strainer.
  18. Simmer for another 5 minutes.
  19. Next, add chopped scallions, (white part)
  20. Taste and adjust seasoning and salt according to your preference.
  21. Our Chicken Sotanghon is done!
  22. Serve immediately while it's piping hot.
  23. Top with hard boiled egg, scallions & fried garlic.
  24. A tasty Chicken Soup that will satisfy & give you comfort on a cold & rainy day.
