Bananas baked in beer batter with salted caramel
For the sauce, pour the sugar into a tall pot and heat over medium heat, without stirring, occasionally moving the pot, until it melts and turns into a beautiful amber-colored caramel.
Mix the ingredients for the dough in a large bowl until smooth. The crust will be really crispy when the mixture is ice cold, so it is worth working with cold beer, or even throwing a few ice cubes into the finished dough and mixing it in this way. Dip the whole bananas into the mixture and then put them in the hot, 200-degree oil, where we fry them until their crust is nice and golden and crispy. Serve with the salted caramel sauce.
