More than 100 varieties of rowan grow in the temperate zone of Europe, but only in Russia are autumn frosts added to the tree's abundance, making rowan berries ideal for making jam.
Candied rowan berries are an ancient Russian delicacy that once rivaled pastila and marmalade. And deservedly so! Incidentally, in the late 19th and early 20th centuries, candied rowan berries were served in upscale restaurants in Moscow and St. Petersburg in winter alongside cognac and liqueurs, or in coffee shops as an elegant accompaniment to tea. The snow-white berries, seemingly dusted with snow, were also often used to decorate Christmas trees.
