Sacher Torte and five more chocolate sweets

The Sacher torte is one of the most famous chocolate cakes in the world, and also one of the most copied. It was created at the Hotel Sacher in Vienna, where today, a century later, it is still prepared and sold in the adjacent pastry shop. From there, it is shipped worldwide in an elegant wooden box.

This is the version that pastry chef Andrea Dopico prepared on the Canal Cocina program "The Best Desserts in the World" along with five other sweets, also for chocoholics, whose recipes you will find by clicking on the photos.

  • Prepare the cake by melting the chocolate and butter.
  • Beat the egg yolks with half the sugar on one side, and the egg whites with the remaining sugar on the other.
  • Mix the melted chocolate with the egg yolk mixture, cocoa, flour, and almond powder.
  • Add the egg whites gently.
  • Pour this mixture into two 14cm molds and bake at 190ºC for 15-20 minutes.
  • Let cool and unmold.
  • Melt the chocolate and mix with the 110 ml of boiling cream. Mix well until you obtain a smooth mixture. Set this ganache aside.
  • In a saucepan, bring the water, sugar, and cocoa powder to a boil. Add the 60 ml of cream and pour over the reserved ganache. Whisk until you have a glossy mixture. Let it cool.
  • Place a layer of sponge cake and fill with apricot jam, place the other sponge cake on top and cover with the topping.
  • Serve.
