Sweet, fruity and wonderfully refreshing: make your own red berry compote with our video

All red fruit juice (cherry or currant)

Ingredients · Servings 6
  • 125g strawberry
  • 125 g blueberries
  • 125 g sour cherries
  • 125 g raspberries
  • 0.5 vanilla bean
  • 0.5 l red fruit juice
  • 3 tablespoons cornstarch
  • 50 g sugar
Method · 30 min
  1. Rinse all the fruit except the raspberries and place them on a baking sheet lined with paper towels to dry, shaking the pan gently. Clean the fruit. Sort through the raspberries. Pit the cherries. Split the vanilla bean lengthwise and scrape out the seeds. Bring the vanilla seeds and pod to a boil with the fruit juice. Mix the cornstarch with 3 tablespoons of water until smooth and add it to the boiling fruit juice.
  2. Bring to a boil again, stirring constantly, and add the fruit. Remove from the heat and sweeten to taste with sugar, if desired. Let the fruit compote cool. Remove the vanilla pod just before serving.

Tip: Vanilla ice cream or liquid or whipped cream goes well with this. Red berry compote can also be easily made with frozen fruit. Depending on the season, you can use black and red currants instead of strawberries and blueberries.
