Wafer semifreddo

Wafer semifreddo is a quick and easy no-bake dessert. It's made by alternating layers of chocolate wafers with a luxurious cream made from ricotta cheese, condensed milk, and whipped cream. The mixture is then placed in the freezer for a few hours, then topped with cocoa spread and chopped hazelnuts.

Ingredients · Servings 4-6 people
  • Chocolate wafers, 350 gr
  • Condensed milk, 300 g
  • Ricotta, 250 gr
  • Fresh cream, 200 ml
  • Hazelnut spread, to taste
  • Chopped hazelnuts, to taste
  • Chocolate wafers, to taste
Method · 30 min
  1. To prepare the wafer semifreddo, first collect the ricotta in a bowl and gradually pour in the condensed milk, whipping everything together with the whisk (1).
  2. Whip the fresh cream in a separate bowl (2).
  3. Add the whipped cream to the ricotta and milk cream, a little at a time (3).
  4. Mix gently from bottom to top with a spatula so as not to deflate it (4).
  5. Proceed to assemble the semifreddo: line a 28x10 cm plumcake mould with cling film, then form the first layer of wafers (5).
  6. Spread half of the cream (6) and level it well.
  7. Continue with a second layer of wafers (7).
  8. Add the remaining cream and complete with the last layer of wafers (8).
  9. Wrap the mould in cling film (9) and leave the cake to harden in the freezer for at least 4-5 hours.
  10. After this time, delicately unmold the semifreddo and turn it upside down onto a tray (10).
  11. Decorate the surface of the wafers with the hazelnut cream (11).
  12. Add the chopped hazelnuts on the surface and finish with a few pieces of wafer if desired (12).
  13. The wafer semifreddo is ready to be enjoyed (13)

The result is a fresh and ultra-delicious dessert, perfect for slicing and serving as a snack or as a happy ending to a meal, but also ideal for celebrating a children's birthday or a special occasion.

If you like, you can replace the cocoa wafers with your favorite flavor, flavor the filling with a drop of vanilla extract or a pinch of cinnamon, or replace the ricotta with cream cheese or Greek yogurt for a lighter result.
