Pumpkin syrup recipe for autumn drinks

Material

Ingredients · Servings 8
  • 140g of pumpkin
  • 250 g of sugar
  • 36 cl of water
  • 3 cinnamon sticks
  • 2 cloves
  • 1 teaspoon of ground ginger
  • 1.5 teaspoons of ground nutmeg
Method · 50 min
  1. For the pumpkin puree: Roughly chop pieces of pumpkin and plunge them into a saucepan of boiling water. Cook them for about 20 minutes (or until the pumpkin is soft when a knife is inserted).
  2. Drain the pumpkin pieces and blend them until you obtain a smooth puree, set aside.
  3. Preparing the syrup: In a pan (or saucepan), mix the sugar and water and bring to a boil.
  4. When the sugar is well dissolved in the water, add the cinnamon sticks, cloves, ginger, nutmeg and pumpkin puree.
  5. Cook for 20 minutes over low heat.
  6. Once the mixture has reduced significantly, remove from the heat and strain the syrup through a fine-mesh sieve or a reusable coffee filter, for example. Pour the syrup into an airtight bottle and let it cool before sealing.
  7. And there you have it, your pumpkin syrup is ready!

Reusable cheesecloth or filter

Roughly chop the pumpkin into pieces and place them in a pot of boiling water. Cook for about 20 minutes (or until the pumpkin is tender when pierced with the tip of a knife).
