- 500g Potatoes
- 1 clove of garlic
- 10 cl Milk
- 1 tablespoon of crème fraîche
- 10 g Butter

- Peel the potatoes, then rinse them thoroughly under cold water to remove all traces of dirt. Cut them into evenly sized pieces for uniform cooking. Peel the garlic clove as well. Place everything in a saucepan or pot, then cover generously with cold water. Add a little salt at the start to begin flavoring the potatoes as they cook.
- Place the saucepan over medium-high heat and gently bring to a boil. Once boiling, reduce the heat slightly to maintain a steady simmer. Cook for approximately 25 to 30 minutes, until the potato pieces are very tender. Check for doneness by inserting the tip of a knife: it should slide in easily without resistance.
- While the potatoes are finishing cooking, pour the milk into a small saucepan and warm it gently over low heat, without letting it boil. This helps keep the mash smooth and prevents the potatoes from cooling down when you mix them in. Also, keep the cream and butter handy so you can quickly stir them in later.
- When the potatoes are cooked through, drain them immediately along with the garlic, then return them to a bowl or the still-warm saucepan. Mash them right away using a potato masher or a fork. Work the flesh carefully to obtain the smoothest texture possible, taking care not to use a blender, which would make the mash sticky.
- Gradually pour the lukewarm milk over the mashed potatoes, stirring constantly to combine. Then add the cream, followed by the butter cut into small pieces so it melts easily. Mix with a wooden spoon or spatula until you have a smooth, creamy, supple, and buttery purée.
- Taste the purée, then adjust the seasoning with salt and pepper to your liking. Mix one last time to evenly distribute the flavors. If the texture seems too thick, add a splash of warm milk. Serve the purée immediately, piping hot, to enjoy its soft, sweet, and smooth texture.
