Toasted Flour Cookies - Pilar Hernández's Chilean Kitchen

I made these toasted flour cookies for a Legend of Zelda-themed birthday party. At first, they have a very strong toasted flour flavor, which surprised me. Now I'm imagining them as alfajores with a watermelon cream filling—a very Chilean pseudo-merman. The texture is that of a typical shortbread cookie, very crispy.

Ingredients · Servings 30
  • 150 grams of butter at room temperature
  • 1/2 teaspoon of salt
  • 2/3 cup of sugar
  • 1 egg
  • 1 cup of toasted flour
  • 1 cup of all-purpose flour
  • sugar for sprinkling

  1. In a bowl, beat the butter until creamy. Add the sugar and salt and beat until combined, do not overbeat. Add the egg and beat until you have a smooth mixture.
  2. Add the flour and stir until everything is moistened and starts to form crumbs.
  3. Finish combining by hand, kneading just enough.
  4. Form a disc and, using two sheets of parchment paper or similar, roll out the dough to a thickness of 1/2 cm. Cut into the desired shape.
  5. Refrigerate for 2 hours or 15 minutes in the freezer (this is to help them keep their shape).
  6. Preheat the oven to 180C or 350F.
  7. Sprinkle with sugar if desired on the pre-cut cookies.
  8. Bake for 15-18 minutes until golden brown on the edges and bottom.
  9. Let it cool in the can.
