Toasted Flour Cookies - Pilar Hernández's Chilean Kitchen
I made these toasted flour cookies for a Legend of Zelda-themed birthday party. At first, they have a very strong toasted flour flavor, which surprised me. Now I'm imagining them as alfajores with a watermelon cream filling—a very Chilean pseudo-merman. The texture is that of a typical shortbread cookie, very crispy.
Ingredients · Servings 30
- 150 grams of butter at room temperature
- 1/2 teaspoon of salt
- 2/3 cup of sugar
- 1 egg
- 1 cup of toasted flour
- 1 cup of all-purpose flour
- sugar for sprinkling

- In a bowl, beat the butter until creamy. Add the sugar and salt and beat until combined, do not overbeat. Add the egg and beat until you have a smooth mixture.
- Add the flour and stir until everything is moistened and starts to form crumbs.
- Finish combining by hand, kneading just enough.
- Form a disc and, using two sheets of parchment paper or similar, roll out the dough to a thickness of 1/2 cm. Cut into the desired shape.
- Refrigerate for 2 hours or 15 minutes in the freezer (this is to help them keep their shape).
- Preheat the oven to 180C or 350F.
- Sprinkle with sugar if desired on the pre-cut cookies.
- Bake for 15-18 minutes until golden brown on the edges and bottom.
- Let it cool in the can.
