Hard-boiled egg pasta - Pilar Hernández's Chilean Kitchen
Canapés are a must at end-of-year celebrations, especially for New Year's. In my family, we always had canapés and crackers for the toast. Here's my recipe for hard-boiled egg spread and a version with hearts of palm.
Ingredients · Servings 8
- 6 hard-boiled eggs
- 1/2 cup of mayonnaise
- picado chives
- salt and pepper

- Cook the eggs in a small saucepan of cold water; as soon as it comes to a boil, let it cook for 1 minute. Turn off the heat and leave them in the hot water for 10 minutes. Place the eggs in ice water. Let them cool and then mash them.
- Mix everything together and season well.
- Fill the cocktail bread or place on sliced bread cut into circles as seen in the photo.
This canapé spread with hearts of palm and eggs is delicious and very easy to make. If you're making a lot of canapés at La Vega Central market in Santiago, you can find giant, inexpensive jars of hearts of palm. When we launched our book, From Blog to Table, we made little sandwiches with this spread. You can also make this spread without the eggs, using only cream cheese and hearts of palm, and adding an herb like chives is also very tasty.
