- To make your tahini cookies, pour the sesame cream and coconut oil into a large bowl. Begin mixing the ingredients with a fork until smooth and fluid. Add the brown sugar and granulated sugar, stirring constantly to distribute them evenly. Now sift the flour directly into the bowl and add it to the rest of the ingredients. Finally, flavor everything with vanilla extract and add salt to enhance the flavors and balance the sweetness.
- Once the mixture is smooth, add the baking soda and mix thoroughly to evenly distribute it. Chop the dark chocolate into larger or smaller pieces and pour it directly into the bowl. Stir in the chocolate chips using a spoon to distribute them evenly throughout the mixture. Now cover the bowl with plastic wrap and let it rest in the refrigerator for 30 minutes.
- Line a baking sheet with parchment paper to prepare the base for your cookies. Using an ice cream scoop, scoop out small portions of dough and place them on the baking sheet. Remember to space them well apart, as the cookies will expand considerably during baking. Preheat the oven to 180°C (350°F), place the baking sheet in the oven, and bake for about 12-15 minutes. Once they're golden brown on top, remove them from the oven, let them cool completely, and serve.
