Having last-minute guests and looking for a unique idea? Making homemade appetizers might seem time-consuming and laborious, but today I'll surprise you.
- Flour 00 180 gr
- 135g grated Grana Padano
- Butter 120 g
- Dried oregano 2 g
- 1 pinch of fine salt
- Ice water 1 or 2 tablespoons only if needed
- Cut the cold butter into cubes and transfer it to a large bowl. Immediately add the grated Grana Padano to begin creating the base of your savory pastry.
- Pour the 00 flour and dried oregano into the bowl. Add a pinch of salt to balance the saltiness and enhance all the flavors.
- Begin to form a sandpapery dough, working the ingredients very quickly with your fingertips. The goal is not to heat the butter and to obtain a grainy mixture, made up of large lumps flavored with oregano.
- Quickly work the dough with your hands until it forms a smooth, compact dough. If you notice the dough is struggling to hold together, add 1-2 tablespoons of ice water to help it hold together without heating the butter. Transfer the dough to a lightly floured surface and roll it out with a rolling pin until it's about 3-4 millimeters thick. Use a cookie cutter or a pastry wheel to shape your savory biscuits. Gently transfer them to a baking sheet lined with parchment paper and refrigerate for at least 10 minutes. This step is essential for maintaining their shape during baking. Meanwhile, preheat your oven to 180°C (350°F). Bake the biscuits while they're still cold from the refrigerator for about 10 minutes. Remove them from the oven as soon as the edges are lightly golden. Let them cool completely, preferably on a wire rack, to ensure maximum crispiness before serving.
