Bruschetta Sciccheria: How to Make It at Home with Manforte's Recipe
Bruschetta is a great appetizer, or even a simple dish to prepare for aperitivo. In times of isolation like these, to avoid wasting anything, we could even make it with slightly stale bread. With this recipe from Manforte in Rome, success is guaranteed.
Ingredients
Cherry tomatoes Aromatic herbs (basil, rosemary, thyme) Brown sugar Extra virgin olive oil Salt Buffalo burrata Anchovy fillets in oil Homemade bread.
Preparation
Take the cherry tomatoes and cut them in half. Meanwhile, finely chop the herbs (basil, rosemary, and thyme) and mix them with the oil. Combine the herbs with the cherry tomatoes. Place the cherry tomatoes in a baking dish and cover with brown sugar. Bake at 160°C (320°F) for 60 minutes. Cut the bread into not-too-thin slices and toast the slices (in a pan or in the oven). Cover the bread slice with a layer of cherry tomatoes, top with a spoonful of burrata and 2 anchovy fillets.
