Apple and Cheddar Muffins

Take these delicious apple and cheddar muffins on the go for a satisfying snack. Eggs are a great ingredient for homemade snacks! They act as a binder, add moisture and volume to the muffins, and make them even more appealing. But that's not all: they enrich the snack with protein and several other healthy nutrients!

Ingredients

  • 500 ml (2 cups) of all-purpose flour
  • 10 ml (2 tsp) of baking powder
  • 2.5 ml (1/2 tsp) of salt
  • 125 ml (1/2 cup) of softened unsalted butter
  • 80 ml (1/3 cup) of brown sugar
  • 2 eggs
  • 125 ml (1/2 cup) of milk
  • 375 ml (1 1/2 cups) of peeled and diced apples
  • 250 ml (1 cup) of grated cheddar cheese

Steps

  • Preheat the oven to 220°C (425°F).
  • In a bowl, mix the flour with the baking powder and the salt.
  • In another bowl, beat the butter and brown sugar with an electric mixer until creamy. Add the eggs and milk, then beat again.
  • Combine the dry ingredients with the wet ingredients and stir with a wooden spoon until a smooth batter forms. Add the apples and cheddar cheese, then stir gently.
  • Butter the twelve cavities of a muffin tin, then divide the batter among them.
  • Bake for 5 minutes. Reduce oven temperature to 180°C (350°F) and continue baking for 15 to 18 minutes, until a toothpick inserted into the center of a muffin comes out clean.
  • Remove from the oven and let cool on a wire rack.
