Homemade applesauce

There's nothing more comforting than homemade applesauce made with love. Here, peeled McIntosh apples reveal all their sweetness and fresh aroma. They simmer gently with water, a drizzle of maple syrup, and a cinnamon stick. The result? A smooth and fragrant applesauce with a hint of spice, instantly evoking the colors and flavors of the season. Easy to make, it keeps well and is the perfect fall snack. Enjoy it warm or cold, on its own, with meats, as a spread, in homemade snacks and desserts, or with yogurt and granola.

Ingredients

  • 3.5 kg (approximately 7 3/4 lb) of peeled, cored and cubed McIntosh apples
  • 160 ml (2/3 cup) of water
  • 250 ml (1 cup) of maple syrup
  • 60 ml (1/4 cup) of fresh lemon juice
  • 1 cinnamon stick
  • 3 star anise
  • 5 ml (1 tsp) ground ginger
  • 2.5 ml (1/2 tsp) of salt

Steps

  • In a large saucepan, combine the apples with the water, maple syrup, lemon juice, cinnamon stick, star anise, ginger, and salt.
  • Cook for 20 to 30 minutes over medium heat, stirring occasionally, until the apples are tender and beginning to break down into a compote. Remove from the heat and let cool slightly. Remove the cinnamon stick and star anise.
  • Using a hand blender or food processor, purée or blend the mixture until the desired consistency is reached.
  • Divide the apple compote into glass jars. Let it cool slightly, then cover and refrigerate for 2 to 3 hours.
