Beef sirloin steaks with blue cheese sauce

Ingredients
- 4 sirloin steaks of 180 g each (approximately 1/3 lb)
- 15 ml (1 tbsp) of butter
- 60 ml (1/4 cup) chopped dried (French) shallots
- 125 ml (1/2 cup) dry white wine
- 180 ml (3/4 cup) of 15% cooking cream
- 100 g (3 1/2 oz) of crumbled Rebellion 1837 cheese
- Salt and pepper to taste
- 15 ml (1 tbsp) of canola oil
- 30 ml (2 tbsp) of chopped fresh parsley (optional)
Steps
- About 15 minutes before cooking, remove the sirloin steaks from the refrigerator and let them rest at room temperature.
- In a small saucepan, melt the butter over medium heat. Cook the shallots for 2 to 3 minutes.
- Pour in the white wine and heat until half the liquid has evaporated.
- Add the cream and cheese. Heat over low heat, stirring constantly, until the cheese is melted. Season with salt and pepper. Keep warm.
- Season the sirloin steaks with salt and pepper.
- In a large ridged skillet, heat the canola oil over medium-high heat. Cook the sirloin steaks for 2 to 3 minutes per side, for rare.
- Serve the sirloin steaks topped with blue cheese sauce. If desired, garnish with parsley.
