Bagel casserole with cheese curds

Simple, bursting with delicious flavors, and requiring only 15 minutes of prep, this bagel casserole with cheese curds has it all. Combine eggs, milk, cream, and fresh herbs with sliced ​​bagels, bacon, red onion, and a generous portion of cheese curds. Bake for 30 minutes to create a golden and gooey one-pot meal.

Ingredients

  • 6 eggs
  • 80 ml (1/3 cup) of regular milk or unsweetened plant-based milk of your choice
  • 80 ml (1/3 cup) of 15% cooking cream
  • 60 ml (1/4 cup) of chopped fresh herbs of your choice (chives, parsley, basil, etc.)
  • Salt and pepper to taste
  • 5 or 6 bagels of your choice (plain, multigrain, fully loaded, etc.) cut into cubes
  • 4 slices of cooked and chopped bacon
  • 1/2 small red onion (or 60 ml – 1/4 cup chopped green onions)
  • 200 g (approximately 1/2 lb) of cheese curds (or another cheese of your choice cut into cubes)

Steps

  • Preheat the oven to 180°C (350°F).
  • Lightly butter a baking dish.
  • In a large bowl, whisk the eggs with the milk, cream and herbs. Season with salt and pepper.
  • Add the bagel cubes, bacon, and red onion to the bowl. Stir so that the bagel cubes are well coated in the egg mixture.
  • Transfer the mixture to the baking dish. Scatter the cheese curds on top.
  • Bake for 30 to 35 minutes, until the mixture is set and the top is lightly golden.
  • Remove from the oven and let rest for 5 minutes before serving.
