Ingredients

4 salmon fillets, 150g (1/3 lb) each, skin removed

30 ml (2 tbsp) of Cajun seasoning

15 ml (1 tbsp) of olive oil

125 ml (1/2 cup) chopped dried (French) shallots

15 ml (1 tbsp) chopped garlic

250 ml (1 cup) of 15% cooking cream

125 ml (1/2 cup) of vegetable broth

125 ml (1/2 cup) grated Parmesan cheese

2 Italian tomatoes, seeded and diced

Salt and pepper to taste

Steps

Season the salmon fillets with half of the Cajun spices.

In a frying pan, heat the oil over medium heat. Sear the salmon fillets for 1 minute on each side. Set aside on a plate.

In the same pan, cook the shallots and garlic for 1 minute.

Pour in the cream and stock. Add the Parmesan cheese, tomatoes, and the remaining Cajun seasoning. Season with salt and pepper and bring to a boil.

Return the salmon fillets to the pan and continue cooking for 6 to 8 minutes.
