- Wash the 6 lemons thoroughly under cold running water, rubbing them well with your hands to remove any impurities from the peel. Dry them with a clean cloth, then roll them on the work surface for a few seconds, pressing lightly with the palm of your hand. This helps soften the flesh and release more juice. Next, cut the lemons in half and remove any visible seeds to prevent them from adding bitterness to the dish.
- Squeeze all the lemon halves using a manual or electric citrus juicer to extract as much juice as possible. Pour this juice into a large bowl or pitcher. Then, pass it through a small sieve to remove any stray seeds and excess pulp if you prefer a smoother texture. This will give you a more pleasant lemon base, better suited for making concentrated homemade lemonade.
- Pour the 300g of white sugar into a large container, then gradually add the 1.5 liters of water. Stir thoroughly with a large spoon until the sugar is mostly dissolved. As this recipe requires no cooking, this step needs a little attention to prevent excessive sediment from settling at the bottom. Stir carefully to obtain a smooth base that will keep well and be easy to serve.
- Add the strained lemon juice to the sweetened water, then stir thoroughly for one to two minutes to evenly distribute the flavors. Taste the mixture to check the balance between acidity and sweetness. Since this lemonade is concentrated, its flavor should remain pronounced, as it can be served very cold, with ice cubes, or slightly diluted with water, according to your preference. If necessary, stir again to obtain a perfectly smooth mixture.
- Strain the lemonade through a fine-mesh sieve into a large, clean pitcher or bowl. This second straining removes the thickest pulp residue, resulting in a smoother, more consistent drink that's better for storage. For an even thinner consistency, you can repeat the process with an even finer sieve. This step also enhances the presentation when serving.
- Pour the concentrated lemonade into one or more perfectly clean bottles, ideally sterilized for optimal preservation. Seal them tightly and refrigerate immediately. Allow the lemonade to cool completely before serving. When ready to serve, you can serve it as is if you prefer a strong flavor, or dilute it slightly with fresh water. Always keep this lemonade refrigerated and consume it promptly after opening.
