Fluffy American pancakes

Here is the recipe for classic American fluffy pancakes. With generous amounts of good butter and dripping syrup, these can be enjoyed at any time of the day.

Ingredients · Servings 1
  • 3 eggs
  • 2 dl milk
  • 150 g wheat flour
  • 1 - 2 tablespoons sugar
  • 1.5 tsp baking powder
  • 1 teaspoon vanilla sugar
  • 1 pinch of salt
  • butter
  • dairy butter
  • maple syrup
Method · 30 min
  1. Separate the eggs. Whisk together the milk, egg yolks, sifted flour, baking powder and vanilla sugar.
  2. Beat the egg whites with sugar and a pinch of salt until soft peaks form. Pour the meringue into the pancake batter.
  3. Fry small, thick pancakes over medium heat in a non-stick frying pan. Small egg pans or pancake pans are also perfect. It is not necessary to use a lot of fat in the pan while frying, a little is all that is needed. Alternatively, you can put a little oil or butter on kitchen paper and just lightly grease the pan between each time.
  4. The pancakes will rise a bit during cooking, when you see that the surface is starting to "set" and the underside is nicely golden brown it is time to flip the pancakes. Carefully flip and cook for about 40 seconds on the other side.
  5. Serve the pancakes freshly made with toppings as desired.
