Apple pancakes with chèvre and thyme
These apple pancakes offer the perfect combination of fluffy, sweet, salty and sour, and topped with chèvre and thyme, they are perfect for breakfast, lunch and dinner. It is easy to make the pancakes both gluten-free and lactose-free.

- 1 egg
- 2 dl milk
- 2 dl mel
- 1 teaspoon baking powder
- 1 pinch of salt
- 1 apple
- 100 g goat cheese
- 1 sprig thyme
- honey
Method · 25 min
- Whisk together eggs and milk in a bowl.
- Add all the dry ingredients and whisk well until you have a lump-free batter.
- Coarsely grate an apple and mix it into the pancake batter.
- Fry small pancakes over medium heat until you see them start to bubble.
- Flip the pancakes and add the chèvre. Cook until the cheese has warmed up a bit.
- Serve the pancakes with fresh thyme and honey.
