I don't knead the shortcrust pastry. I make these apple pancakes much faster than apple pie

I love homemade apple pie, but I rarely have time to knead the shortcrust pastry, roast the apples, and wait for the whole thing to bake in the oven.

Ingredients · Servings 2
  • 100 g płatków owsianych górskich
  • 1 jajko
  • 100 g twarogu kremowego, półtłustego
  • 1 jabłko

  • 1 łyżeczka cynamonu
  • 60 ml mleka

  • jogurt grecki bez laktozy
  • odrobina syropu z cykorii
Method · 30 min
  1. Zetrzyj jabłko na tarce, Wrzuć je do blendera razem z płatkami owsianymi, jajkiem, twarogiem, proszkiem do pieczenia, wanilią, cynamon, solą i mlekiem. Zmiksuj na jednolitą masę i odstaw na 5-10 minut, aby płatki wchłonęły płyn.
  2. Smaż placuszki na patelni delikatnie posmarowanej oliwą, na średnim ogniu, z obu stron, aż będą złociste.
  3. Jabłko pokrój w drobną kostkę. Przełóż na patelnię, dodaj miód i cynamon (jeśli lubisz to odrobinę masła). Podgrzewaj kilka minut, mieszając, aż jabłko zmięknie i lekko się skarmelizuje.

Simple apple pie-flavored pancakes

The base of these pancakes is made from oat flakes, an egg, milk, grated apple, and low-fat cottage cheese. I simply throw them into a blender and blend until smooth. Then I let it sit for 10-15 minutes to reach the right consistency. If it's too thick, add a little milk. If it's too thin, add more oat flakes. The batter should be firm, but not "clumpy" or hard. I spoon it onto a heated pan, shaping small portions. This makes it easier to flip them later.

But that's not all. The pancakes need one more addition to give them the flavor and aroma of apple pie. It's the applesauce. I dice them into small cubes and add them to the pan. Then I add honey, cinnamon, and a little butter. (Optional) I mix everything until the apples soften and caramelize slightly, then sprinkle them over the delicacies on the plate.

Tip: Sour apple varieties, such as Antonovka, work best in this recipe. They give the pancakes a more interesting flavor. However, you can also use sweet and sour varieties (Jonagold, Rubin, Delikates, etc.).

Tip: You can start preparing the topping for the pancakes while the dough is resting. This will save you some time.

You can prepare an insanely delicious and filling breakfast or dessert without using flour.

For the cake:

  • 100 g mountain oat flakes
  • 1 egg
  • 100 g creamy, semi-fat cottage cheese
  • 1 apple
  • a pinch of crushed vanilla beans
  • 1 teaspoon baking powder
  • 1 teaspoon of cinnamon
  • 60 ml milk
  • a pinch of salt
  • olive oil for frying

Caramelized apple:

  • 1 apple
  • 1 teaspoon of honey
  • 1/2 teaspoon cinnamon
  • a bit of butter (optional)

To serve:

  • lactose-free Greek yogurt
  • a bit of chicory syrup
  • Preparing the filling: Grate the apple. Place it in a blender along with the rolled oats, egg, cottage cheese, baking powder, vanilla, cinnamon, salt, and milk. Blend until smooth and set aside for 5-10 minutes to allow the rolled oats to absorb the liquid.
  • Frying the pancakes Fry the pancakes in a pan lightly greased with olive oil over medium heat on both sides until golden brown.
  • Making the topping: Finely dice the apple. Place in a pan, add honey and cinnamon (and a little butter if you like). Heat for a few minutes, stirring, until the apple softens and caramelizes slightly.

Apple pancakes – serving suggestion

Apples aren't the only addition to these pancakes. I also serve them with plain Greek yogurt and finely chopped walnuts. This gives the whole thing an even richer, "apple pie" flavor. You can also go for toasted almond flakes.

More Technique
