Crepes with asparagus

The days are getting longer, the sun is shining longer, and the first bright colors of the season are appearing on laid tables: spring has arrived! And with it, a desire for fresh, light dishes that also tantalize with new and refined flavors.

Ingredients · Servings 4
  • Whole milk 1 l
  • Flour 400 gr
  • Eggs 8
  • Extra virgin olive oil (EVO) 50 ml
  • Sale 10 gr
  • Butter for greasing
  • Asparagus 1 kg
  • Montasio 250 gr
  • Bechamel sauce 1 l
  • Butter 100 g
  • Grana Padano 100g
  • Egg yolk 2
  • Panna 200 ml
Method · 50 min
  1. In a bowl, beat the eggs with a hand whisk and gradually add the flour. Add the milk, oil, and, lastly, the salt.
  2. Mix the ingredients until smooth. Heat a 20 cm nonstick pan, grease it lightly with butter, pour in a ladleful of the mixture, and, using a rotating motion, spread the batter evenly over the bottom of the pan. Let it cook for a few moments, then flip the crepe and cook the other side.
  3. Once cooked, remove the crepes from the pan and let them cool. Meanwhile, prepare the Mornay sauce: combine the cream, cheese, and egg yolks, stirring constantly with a whisk.
  4. Now prepare the filling for the crepes: clean the asparagus and dice them. Heat a nonstick pan, add the asparagus and butter, and sauté until lightly golden.
  5. Add the asparagus and diced Montasio cheese to the prepared béchamel sauce.
  6. Spread the mixture on the crepes and close them like a handkerchief.
  7. Arrange the crepes in a lightly buttered baking dish and cover with the Mornay sauce.
  8. Preheat the oven to 170°C, cook for 8-10 minutes, then grill the asparagus crepes for a couple of minutes.
