Picnic revolution: a dish that overshadows čevapčiči and pleskavica
Why chicken kebab?
Chicken kebabs are the perfect picnic dish because they work on so many levels. First there's the texture: tender, juicy meat, lightly caramelized at the edges, contrasting with crunchy vegetables and a creamy sauce. Then there's the spices, which elevate the meat above your average roast chicken - adding depth, warmth and character. Plus, chicken is naturally high in protein, making a kebab not only delicious, but also a filling and balanced meal.
The way it is served also plays an important role. Kebab is a complex dish that everyone can adapt to their own taste. Some people will add more sauce, others more vegetables, and still others will prefer to eat it on a plate without bread. This flexibility makes it ideal for social gatherings.
And last but not least: kebab brings a sense of something new. If ćevapčiči is a symbol of tradition, kebab is that modern alternative that shows a little more culinary daring.
It all starts with choosing the meat
If you want a really good result, boneless, skinless chicken thighs are the best choice. They have a bit more fat than breast fillets, which means they stay juicy and tender during baking.
Fresh meat, properly stored and prepared with quality, is the foundation on which you build all the other flavors. And this is especially evident in kebabs.
Marinade as the key to flavor
If we had to single out one step that makes the biggest difference, it would be the marinating. The marinade is what gives chicken its kebab character. It is a combination of spices, acid and fat that together provide flavor and texture. The yogurt in the marinade helps tenderize the meat, the lemon juice adds freshness, and the spices create that characteristic oriental touch that we associate with kebabs.
A longer marinating time means a more intense flavor. If you have the time, it's ideal to marinate the meat overnight. Otherwise, a few hours is enough to allow the flavors to meld nicely.
Baking: grill or pan
Once the meat is ready, it's time to grill it. Grilling is where the kebab really comes to life. The high temperature ensures a nicely browned surface and a slightly smoky flavor. It's important not to grill the meat for too long, as you want to keep it juicy.
If you don't have a grill, a pan is a great alternative. You can achieve a very similar result in it, especially if you cook the meat in several small batches so that it doesn't start to stew. Finally, let the edges brown slightly, as this caramelization adds depth of flavor.
Sauces and toppings that round out the dish
A kebab is not complete without sauce. Sauces are what tie all the elements together and add creaminess. A classic choice is a combination of a refreshing yogurt sauce and a slightly richer, slightly sweet pink sauce.
In addition to sauces, vegetables also play a key role. Fresh cabbage, onions, tomatoes and cucumbers add crunch and balance. Combined with the warm meat, they create a contrast that makes every bite interesting.
Bread, whether it's a bun, a pita, or a tortilla, is the final element that ties everything together. A quick toast gives it a nice texture and further enhances the flavor of the entire dish.

Picnic idea: kebab station
If you want to take it a step further, you can present the kebab as an interactive dish. Instead of putting everything together yourself, prepare the ingredients and let everyone create their own combination. Place bowls of meat, vegetables, sauces and bread on the table. This way of serving is relaxed, fun and always well received. Guests linger over the food, combining flavors and creating something to their liking.
Homemade chicken kebab is the perfect combination of simplicity and impact. It doesn't require any special equipment or complicated techniques, but the result is a dish that stands out. Juicy insides, lightly browned edges, fresh vegetables and a creamy sauce create a harmony that is hard to beat. By choosing quality meat, such as that offered by Pivka perutninarstvo – 100% Slovenian, 100% chicken and raised without antibiotics – you take one step further towards a dish that is not only delicious, but also thoughtful and reliable.
