Avocado and anchovy toast

Today I'm sharing this delicious avocado and anchovy toast. If you've been reading my blog for a while, you know that toast is a staple for some of my weeknight dinners.

Ingredients · Servings 2
  • 2 slices of rustic bread
  • 1 avocado
  • 1/4 of an onion
  • Shall
  • A few drops of lemon
  • A pinch of pepper —optional—
  • Some cherry tomatoes
  • Anchovies in olive oil
  • A few arugula leaves
  • A few leaves of watercress
  • A splash of extra virgin olive oil
  • ¼ of an onion, cut into very thin wedges
Method · 15 min
  1. Lightly toast the bread.
  2. Prepare the anchovies by draining them and rolling them up on themselves.
  3. Wash, dry and cut the cherry tomatoes in half.
  4. Peel the avocado, put it in a bowl and mash it with a fork.
  5. Chop ¼ of an onion into very, very small pieces, and add it to the avocado. Add salt, pepper, and a few drops of lemon juice, and mix.
  6. Spread this mixture on the slices of bread.
  7. Top with the anchovies, cherry tomatoes, a few arugula leaves, and some watercress.
  8. Finish by strategically placing the onion in very thin wedges.
