Toasted bread with grilled sardines
When this time of year arrives, we eat a lot of this grilled sardine toast at home.
Ingredients · Servings 4
- 12 sardines
- 4 tablespoons of homemade fried tomato sauce
- 1 onion
- 2 Italian green peppers
- A pinch of salt
- A pinch of sugar
- 2 tablespoons of extra virgin olive oil
- 4 slices of rustic bread
Method · 35 min
- Remove the heads, guts, and central bone from the sardines and separate the two fillets. Add a little salt—read the tips—

- Peel and slice the onion into fairly thin rounds. Heat olive oil in a frying pan. When it's hot, add the onion, a pinch of salt and a pinch of sugar, and let it caramelize. You'll know it's ready when it's soft and has turned a light golden brown. Remove the onion to a colander to drain well.
- Wash the peppers, slice them into rounds about a finger's width thick, and remove the stem and seeds. Fry them—I do it in the oil I used to fry the onions. Cover them so they cook faster with the steam.
- Put a non-stick frying pan on the heat and add a drizzle of oil. When it's hot, grill the sardines: just sear them for a few seconds on each side.
- Toast the bread slices. Place the warm tomato sauce on the bottom, then the caramelized onion, and top with the sardines and pepper. Serve immediately.
