Can fresh sardines be used instead of canned sardines?

- 1 can of sardines in oil (100 g)
- 100g fresh cheese
- 1 small shallot
- 3 sprigs of coriander (or parsley, according to taste)
- 1 tsp capers
- unit green olives
- Espelette pepper
- 2 tbsp lemon juice (preferably lime)

- Finely chop the shallot and a teaspoon of capers.
- Mix together the fresh cheese, chopped coriander, shallots, capers, a pinch of Espelette pepper and lemon juice. Add salt.
- Add the sardines and mix them in with a fork (there should still be small pieces).
- Garnish with olive slices and a coriander leaf.
Yes, you can use fresh sardines. You'll need to cook them beforehand, either by grilling or poaching, then drain them thoroughly to remove excess liquid. Canned sardines are more convenient and ready to use, but fresh ones can provide an even more authentic flavor.
