Spicy pork ramen noodles
You can never have too many ramen noodle recipes, especially one that includes fried onions, which are often prepared in large quantities to enhance the flavor and texture of countless dishes. In this recipe, ground pork is combined with ultra-tender onions, ginger, garlic, and a spicy chili seasoning.

- 450 g (1 lb) lean minced pork
- 15 ml (1 tbsp) of vegetable oil
- 1 yellow onion, thinly sliced
- 4 cloves of garlic, chopped
- 30 ml (2 tbsp) of chopped fresh ginger
- 115 g (1/2 cup) of butter
- 60 ml (1/4 cup) of homemade or store-bought chili crisp (see note)
- 30 ml (2 tbsp) of brown sugar
- 4 packs of 85 g (3 oz) each of dry ramen noodles, without the seasoning sachets
- 15 g (1/3 cup) of chopped coriander stems and leaves
- 10 g (1/4 cup) of chopped mint leaves
- 1 lime, finely grated zest
- 45 ml (3 tbsp) of lime juice
- 250 ml (1 cup) of homemade or store-bought fried onions
Method · 40 min
- In a large non-stick frying pan over medium-high heat, cook the pork in the oil, breaking it up with a wooden spoon until it begins to brown, about 8 minutes. Season with salt and pepper.
- Add the onion, garlic, and ginger. Continue cooking for 5 minutes, or until the onion is soft. Add the butter, hot seasoning, and brown sugar. Continue cooking for 6 to 8 minutes, or until the pork is well browned, stirring frequently.
- Meanwhile, in a pot of boiling salted water, cook the noodles al dente, about 2 to 3 minutes, stirring to separate them. Reserve 375 ml (1 1/2 cups) of the cooking water. Drain the noodles.
- Add the noodles, 250 ml (1 cup) of the cooking water, cilantro, mint, and lime zest and juice to the pan with the pork. Stir the noodles for 1 to 2 minutes, or until the sauce is smooth. Add more cooking water to thin the sauce, if needed. Adjust the seasoning.
- Divide the noodles among shallow bowls. Top with fried onions.
